Panang Curry

Panang Curry is a rich Thai curry featuring chicken simmered in a fragrant mixture of Panang curry paste and coconut milk, balanced with kaffir lime leaves and a touch of sweetness from sugar. The curry has a creamy texture and a mildly spicy, aromatic flavor enhanced by the lime leaves’ citrus notes. Green peas add a tender pop, creating a colorful and satisfying meal served over steamed rice.

Description

This Panang Curry recipe starts by heating neutral cooking oil and frying Panang curry paste until fragrant. Bite-sized chicken breast pieces are added to coat with the paste, infusing the meat with deep flavor. Green peas, creamy coconut milk, bruised kaffir lime leaves, water, sugar, and fish sauce are stirred in to create a balanced sauce.

The curry simmers gently on medium heat for 8-10 minutes until the chicken is cooked and the flavors meld. Coconut milk gives the sauce its smooth texture and richness, while kaffir lime leaves contribute fresh lemony aroma. The small peas add bursts of softness in the curry.

Serve hot with steamed white rice to soak up the sauce, making a comforting and aromatic main dish that highlights Thai flavors without excessive heat.
