Pancit Bihon Recipe

Pancit Bihon is a Filipino stir-fried noodle dish featuring rice noodles, pork, chicken, and mixed vegetables like snow peas, carrots, and cabbage. The noodles absorb a savory broth flavored with soy sauce, garlic, and chicken powder. The dish balances tender meats and crisp vegetables with the soft noodles for a hearty, communal meal.

Description

This Pancit Bihon recipe involves cooking sliced pork and cooked chicken with garlic and onion sautéed in oil. Chicken powder and water create a flavorful broth base, which simmers to extract meat flavors. A variety of vegetables including carrots, snow peas, cabbage, and celery leaves are added to the broth briefly to soften.

The broth is then separated from the meats and vegetables, and soy sauce is added. The soaked rice noodles are cooked directly in the broth until the liquid evaporates, allowing the noodles to absorb the savory flavors. Finally, the previously cooked meat and vegetables are added back to combine and heat through briefly.

The finished dish offers tender meats and vegetables mingling with noodles that have absorbed the combined sauces and broth, creating a layered and balanced texture and flavor. It is best served hot, often shared in communal settings.

Optional ingredients like Chinese sausage or bell peppers may be added to enrich flavor or personalize. Snap peas can substitute snow peas if desired.
