Pancit (Filipino Fried Rice Noodles) Recipe

Pancit is a Filipino fried noodle dish featuring softened rice sticks stir-fried with garlic, onions, chicken thigh, shrimp, cabbage, carrots, and scallions. Seasoned with soy sauce, oyster sauce, and fish sauce, this dish offers a savory balance with fresh lime juice added at serving for brightness. The noodles retain a tender texture while absorbing the flavorful sauce.

Description

This Pancit (Filipino Fried Rice Noodles) Recipe uses rice sticks softened in water, then stir-fried with garlic, onions, chicken, and shrimp. Vegetables like cabbage and carrots add crunch, while scallions provide freshness at the end. The combination of soy sauce, oyster sauce, and fish sauce creates a layered, savory seasoning that lightly coats the noodles.

The stir-fry method cooks ingredients quickly over medium-high heat, preserving their textures: the noodles remain pliable but intact, shrimp and chicken are cooked through, and vegetables maintain some crispness. The notes recommend using long chopsticks to avoid breaking the noodles excessively during cooking.

Serve the dish with calamansi or regular lime juice squeezed over the noodles to introduce a tangy contrast. This enhances the overall flavor and adds a bright finish. It works as a main dish or part of a larger meal.

  • 4 oz. (125g) chicken thigh or chicken breast, cut into pieces, boneless and skinless
  • 4 oz. (125g) Shrimp shelled and deveined
  • 2 oz. (60g) green cabbage thinly sliced
  • 2 oz. (60g) carrot cut into thin strips
  • 2 talks scallions cut into 2-inch (5 cm) strips

Seasonings:

  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon fish sauce
  • salt to taste
  • 3 dashes black pepper ground

Instructions

  1. Soak the rice sticks in water for 5-10 minutes, or until they become soft. Drain in a colander and set aside. Prepare the garlic, onions, and vegetables.
  2. Heat a wok or skillet over medium to high heat. Add the oil and stir-fry the garlic and onions until the onions turn translucent. Add the chicken and shrimp, and stir-fry until the surface turns white, followed by the cabbage and carrots.
  3. Add the rice sticks to the wok or skillet and stir to combine well with a spatula. If you have a pair of long chopsticks for cooking, use them instead of the spatula. This will help prevent the rice sticks from breaking too much.
  4. Add all the ingredients for the Seasonings and stir to mix well. Once the noodles are cooked through, about 1 minute, add the chopped scallions, stir, and dish out immediately.

Notes

  • Squeeze fresh calamansi or lime over the noodles just before serving to add a citrusy brightness.
