Pancit (Filipino Fried Rice Noodles) Recipe
Description
This Pancit (Filipino Fried Rice Noodles) Recipe uses rice sticks softened in water, then stir-fried with garlic, onions, chicken, and shrimp. Vegetables like cabbage and carrots add crunch, while scallions provide freshness at the end. The combination of soy sauce, oyster sauce, and fish sauce creates a layered, savory seasoning that lightly coats the noodles.
The stir-fry method cooks ingredients quickly over medium-high heat, preserving their textures: the noodles remain pliable but intact, shrimp and chicken are cooked through, and vegetables maintain some crispness. The notes recommend using long chopsticks to avoid breaking the noodles excessively during cooking.
Serve the dish with calamansi or regular lime juice squeezed over the noodles to introduce a tangy contrast. This enhances the overall flavor and adds a bright finish. It works as a main dish or part of a larger meal.
