Panda Express Chow Mein Copycat

Panda Express Chow Mein Copycat recreates the stir-fried yaki-soba noodles with crisp celery, tender onions, and cabbage. This recipe uses a savory soy sauce blend with garlic, brown sugar, and ginger, which coats the noodles and vegetables, delivering a slightly sweet and lightly spiced flavor. The noodles are briefly boiled then tossed with sautéed vegetables and the sauce, resulting in a warm, savory, and slightly chewy noodle dish with fresh vegetable textures.

Description

Panda Express Chow Mein Copycat is a homemade version of the classic takeaway stir-fried noodle dish featuring yaki-soba noodles as the base. The noodles are first loosened in boiling water briefly, then drained. The sauce combines reduced-sodium soy sauce, minced garlic, brown sugar, grated ginger, and white pepper to provide balanced savory and sweet notes with a hint of spice.

The cooking process involves sautéing diced onion and sliced celery until tender, then quickly heating shredded cabbage with them. The drained noodles and sauce mixture are combined in the skillet and cooked together briefly, allowing the noodles to absorb the flavors and the vegetables to stay crisp yet tender. The dish is served immediately to retain its texture and warmth.

This homemade chow mein offers a reliable way to enjoy a popular Chinese-American style noodle. It pairs well with a range of dishes or can be served as a simple main. The recipe relies on accessible ingredients including refrigerated yaki-soba noodles and common pantry staples for the sauce and vegetables.

Ingredients

Servings
  • 2 (5.6-ounce) packages yaki-soba noodles seasoning sauce packets discarded, refrigerated
  • ¼ cup soy sauce reduced sodium
  • 3 cloves garlic minced
  • 1 tablespoon brown sugar packed
  • 2 teaspoons ginger freshly grated
  • ¼ teaspoon white pepper
  • 2 tablespoons olive oil
  • 1 onion diced
  • 3 ribs celery sliced diagonally
  • 2 cups cabbage shredded

Instructions

  1. In a large pot of boiling water, add Yaki-Soba until loosened, about 1-2 minutes; drain well.
  2. In a small bowl, whisk together soy sauce, garlic, brown sugar, ginger and white pepper; set aside.
  3. Heat olive oil in a large cast iron skillet over medium high heat. Add onion and celery, and cook, stirring often, until tender, about 3-4 minutes. Stir in cabbage until heated through, about 1 minute.
  4. Stir in Yaki-Soba and soy sauce mixture until well combined, about 2 minutes.
  5. Serve immediately.

Notes

  • Yaki-Soba noodles can be found in the refrigerated section of most grocery stores and resemble ramen-style noodles.
  • Discard the seasoning packets that come with the noodles as the recipe uses its own sauce mixture.
  • Cook the noodles briefly to loosen before stir-frying with vegetables to keep their texture.
