Panda Express Honey Walnut Shrimp

This recipe recreates the Honey Walnut Shrimp dish by coating large shrimp in a light cornstarch batter and frying until golden. The shrimp are then tossed in a creamy sauce made with honey, sweetened condensed milk, mirin, and mayonnaise, balancing sweetness with creaminess. Candied walnuts prepared by boiling sugar syrup and walnuts add a crunchy, sweet garnish. Served immediately with rice and optional green onion, this dish offers a blend of textures and flavors.

Description

Panda Express Honey Walnut Shrimp starts by boiling a syrup of water and sugar with whole walnuts to candy them; once boiled, the walnuts are left to dry on waxed paper to maintain crispness. Shrimp are coated in a mixture of whipped egg whites and cornstarch to create a light but crisp batter. They are fried individually at 350°F until lightly golden and cooked through.

Separately, a sauce blends honey, sweetened condensed milk, mirin, and mayonnaise resulting in a sweet, creamy coating that clings to the fried shrimp. Tossed gently to evenly coat, the shrimp take on a glossy finish. The dish is plated topped with the candied walnuts and optionally sprinkled with chopped green onions for a fresh note.

This shrimp dish highlights the contrast between the crispy coating and tender shrimp, with sweet and creamy sauce complemented by crunchy candied walnuts. Typically served with steamed rice, it provides a satisfying combination of flavors and textures reminiscent of the popular restaurant version.

Ingredients

Servings
  • 1 ½ pound Shrimp 18-20 count - peeled and deveined, large
  • 1 cup water
  • 1/2 cup white sugar
  • 1 cup walnuts whole halves
  • 4 egg white
  • 2/3 cup cornstarch
  • 1 cup vegetable oil for frying

Sauce:

  • 1/4 cup honey
  • 1/4 cup sweetened condensed milk
  • 1 teaspoon mirin
  • 1/3 cup mayonnaise

Garnish:

  • green onion for topping - optional, chopped

Instructions

  1. Add the water, sugar, and walnuts to a small saucepan over medium heat and bring to a boil.
  2. Boil for two minutes and remove the walnuts, arrange them in one layer to dry, on a baking sheet covered with waxed paper.
  3. In a medium bowl, whisk the egg whites until foamy, then add cornstarch and continue whisking until combined. Add the shrimp and stir to combine.
  4. Heat the oil in a medium-sized pot on medium-high heat until it reaches 350 degrees F.
  5. One at a time, using a fork, pick up 1 shrimp, let it drip off the excess coating so that the shrimp has a thin coating.
  6. Fry until light golden brown, 4-5 minutes. Repeat with all the shrimp.
  7. To make the sauce, combine all the ingredients in a large bowl and stir.
  8. Add the fried shrimp to the sauce and gently stir to coat evenly.
  9. Transfer to a serving plate and top with candied walnuts.
  10. Serve immediately with rice and top with sliced green onions.
