Paneer with Vegetables | Mixed Paneer
Description
Paneer with Vegetables | Mixed Paneer features paneer cubes mingled with fresh vegetables such as cauliflower, peas, carrots, and potatoes, marinated with a blend of salt, red chili powder, and garam masala. The cooking involves sautéing onions, ginger, and garlic in oil with bay leaves and spices, followed by tomato puree to form the base sauce. Adding the marinated veggies and paneer to the pan and cooking covered allows the flavors to meld and the ingredients to become tender.
The dish presents a combination of soft paneer with slightly firm vegetables, coated in a richly spiced tomato gravy that carries warm Indian flavors. The moderate cooking technique avoids overcooking the onions to prevent sticking and maintains texture in the vegetables. The use of fresh aromatics and spices like garam masala and red chili powder shapes the dish’s characteristic warmth and depth.
Traditionally, this paneer and vegetable mixture is served hot alongside Indian breads such as roti or paratha, or with steamed rice, making it a flexible accompaniment or main component. Its hearty texture and balance of spices can complement simple meal settings effectively.
The notes advise careful cooking of onions to prevent sticking and recommend partial cooking rather than over-softening. Marinating the vegetables and paneer beforehand enhances the infusion of spice flavors. Regular stirring during the covered cooking stage ensures even heat distribution and avoids burning the bottom.
