Panera Bread French Onion Soup
Description
This recipe begins by slowly sautéing a large quantity of chopped yellow onions in butter with salt until caramelized and golden brown, which takes about 20 minutes. The caramelization develops deep, sweet onion flavors that form the foundation of the soup. A light coating of all-purpose flour is stirred in to add subtle thickness and a toasty aroma similar to pie crust.
Beef stock, chicken stock, beef base, and thyme are added next, and the soup is gently simmered to meld the flavors. The combination of stocks and beef base produces a savory, layered broth that balances the sweet onions. Serving the soup topped with croutons and shredded Gruyère and Asiago cheeses provides a textural contrast and a melted cheesy richness that complements the broth's depth.
