Papaya and banana frozen yogurt
Description
This frozen yogurt combines chunks of ripe papaya and banana blended with plain yogurt, honey, and orange juice for a fruity, creamy dessert. The natural sugars in the fruit and honey sweeten the mix, while the orange juice adds a slight citrus brightness.
Two preparation methods can be used: an ice cream maker to churn and freeze the mixture smoothly, or a manual method involving freezing and periodically mixing with a blender or mixer to achieve a creamy texture without large ice crystals. The frozen yogurt is softened after a few freeze-thaw cycles and then frozen until firm enough to serve.
Serving with fresh fruit adds texture and complements the tropical flavors, making it a light, cooling treat especially suited for warm weather.
Ingredients
- 1 papaya peeled, seeded and cut in chunks, medium sized, ripe
- 2 banana peeled and sliced
- 2 cups PLAIN yogurt
- 3-4 tablespoons honey adjust to taste
- orange juice from 1 medium orange
To serve
- Fresh fruit
Instructions
- Combine all the ingredients in a blender to obtain a smooth puree.
Using an ice cream maker
- Pour the papaya and banana yogurt puree into the ice cream maker and prepare it according to your ice cream maker’s instructions.
- Once it’s ready place the frozen yogurt in a freezer friendly bowl and let freeze for 1-2 hours before serving.
Using a mixer or blender
- To prepare the frozen yogurt without an ice cream maker, place the papaya and banana yogurt mix in plastic or metal freezer friendly container and freeze for 1 hour. It should be semi-frozen, but still somewhat soft.
- Remove from the freezer and use an electric mixer to soften the mix or place it in the blender and mix (make sure your blender is powerful enough to blend frozen foods). Return to the freezer and let rest for another hour, then repeat the process for 3-4 times or until you’ve achieved the desired smoothness. Let the frozen yogurt “ripen” in the freezer for a couple of hours before serving.
- Serve the papaya and banana frozen yogurt with slices of fresh fruit.
