  • 1/2 tablespoon olive oil
  • 1 onion chopped, large
  • 1 yellow pepper chopped, or red pepper
  • 1 green bell pepper (chopped)
  • 4 garlic minced, cloves
  • 3 tablespoons all-purpose flour (or GF flour for gluten-free)
  • 2 teaspoons Hungarian paprika (not smoked)
  • 3 bay leaf
  • 2 cups chicken broth
  • 1/2 tablespoon kosher salt
  • 1/4 teaspoon black pepper crushed
  • 4 pieces chicken thigh trimmed and skinned, on the bone
  • 4 chicken drumstick skinned, small

Instructions

  1. Season chicken with salt and pepper. Heat oil in a large pot or Dutch oven on medium-high heat.
  2. Add oil, onions and peppers. Sauté over medium heat for 8 to 10 minutes, until soft. Add garlic and sauté for another 1 to 2 minutes.
  3. Whisk the flour and paprika in a bowl with the broth and then add to the pot with the bay leaves.
  4. Add the chicken and gently stir. Bring to boil and reduce heat to low.
  5. Stir again and cover the pot. Simmer for 45 to 50 minutes.
  6. Discard bay leaves and serve.
