  • 4 chicken breast 5-6oz each, boneless skinless
  • 3 cups pasta sauce additional for serving if desired
  • 2 medium zucchini sliced ½-inch
  • ½ cup Parmesan Cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 teaspoon garlic powder divided
  • 1 teaspoon Italian seasoning divided
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste
  • ¼ cup olive oil
  • parsley chopped, fresh
  • pasta for serving, optional, cooked

Instructions

  1. Preheat the grill to medium heat. Spray four 12x18-inch foil pieces with cooking spray.
  2. Divide the zucchini among the pieces of foil.  Sprinkle with half of the salt, pepper, and Italian seasoning.
  3. Top each with 2 tablespoons of parmesan cheese and ⅓ cup pasta sauce.
  4. Place a chicken breast on top of the sauce and drizzle with olive oil. Sprinkle with garlic powder and the remaining Italian seasoning, salt, and pepper.
  5. Seal each packet by folding over the long edges a couple of times and then folding the short edges.
  6. Place the packets, chicken side down, on the grill and cook for 8 minutes. Flip them over and grill for an additional 8-10 minutes or until the chicken reaches 165°F.
  7. With the chicken still on the grill, cut a slit into each foil packet with a knife and sprinkle ¼ cup mozzarella cheese. Let rest for 5 minutes to melt the cheese. Garn
  8. Garnish with fresh parsley if using.

  • For serving, boil about 8 ounces of pasta as per package directions if desired to create a fuller meal.
  • Use any pasta sauce you prefer; extra sauce can be added when serving.
