Ingredients
BURGERS
- 1 pound lean ground beef (80/20)
- 1 large egg
- 8 tablespoons freshly grated parmesan cheese divided
- 3-4 sprigs freshly chopped Italian parsley
- 1-2 dashes black pepper
- ¼ teaspoon salt
EXTRAS GRILLED
- 4 slices onion (½ inch thick)
- 4 slices tomato (½ inch thick)
- 2-3 pinches oregano
- 2-3 pinches basil
- 2-3 pinches salt

Instructions
BURGERS
- In a medium bowl combine well the ground beef, egg, 3 tablespoons parmesan cheese, chopped parsley, salt and pepper. Form into 4 patties.
- On a small plate add 5 tablespoons of parmesan cheese, and coat the patties well, one at a time. Making a small indent in the middle of your beef burger patty will keep it from expanding or bulging too much in the middle.
- In a medium frying pan add 1 tablespoon of olive oil and heat, then add the patties and cook until no long pink and browned. (Internal temperature should be 160F).
GRILLED VEGGIES
- On either an indoor pan grill or BBQ grill place tomato and onion slices, be sure to cut them about ½ thick, drizzle tomato slices with olive oil and sprinkle with salt, oregano and basil, do the same with the onions except no basil. Flip them over and repeat. Grill until cooked. (the onion slices will take longer than the tomatoes to cook). If you want place the open hamburger buns on the grill to toast, cut side down.
- On every bun place a beef patty, a slice of tomato, onion, some lettuce and mayonnaise or even an extra slice of parmesan cheese if desired. Enjoy!

- Ensure that your tomatoes are firm and not overly ripe before grilling or you risk them being mushy. When grilling the tomatoes, I recommend watching those closely so you don’t overcook them (which is easy to do). You don’t want them too soft because they will fall apart.
- Fresh toasted burger buns would make these truly special, but you could also use fresh ciabatta bread or even pretzel buns, too!
- You can make the patties ahead of time and refrigerate them until you’re ready to grill. They will last 1-2 days in the fridge. Just make sure to let them come to room temperature before cooking.
- Store leftover burgers in the refrigerator covered in an airtight container for up to 3-4 days. Reheat in the microwave only until warm so you don’t overcook them.
- Yes, but you can only freeze the Parmesan burgers, not the grilled veggies. Cool completely then store in a freezer safe bag or container for up to 3 months. Thaw in the refrigerator, reheat and enjoy.
