Parmesan Crusted Chicken
Description
In this recipe, chicken breasts are halved and gently pounded thin, then coated on both sides with mayonnaise which acts as a binder and adds moisture. A seasoned breadcrumb and parmesan mixture provides a flavorful crust that crisps up in the oven. The blend includes garlic powder, paprika, salt, and pepper, contributing savory notes.
Baked at 400°F, the chicken cooks evenly and develops a crunchy exterior while staying juicy. This preparation highlights the contrast between the crispy parmesan coating and the tender meat inside, delivering a satisfying texture.
Serving suggestions include pairing the chicken with simple sides like salads, roasted vegetables, or pasta. Adjusting the seasoning or using fresh garlic instead of powder can customize flavor. The recipe’s straightforward technique makes it suitable for weeknight meals where a flavorful yet uncomplicated main is desired.
This dish demonstrates how mayonnaise can replace traditional coating liquids to yield a rich, crisp crust, and how using pre-seasoned breadcrumbs simplifies preparation without sacrificing taste.
Ingredients
- 3 chicken breast boneless, skinless
- 1 cup Italian seasoned breadcrumbs
- ½ cup Parmesan Cheese grated
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ½ teaspoon black pepper freshly ground
- ¼ teaspoon paprika ground
- ⅓ cup mayonnaise
Instructions
- Preheat the oven to 400°F. In a large shallow bowl or on a large plate, combine the breadcrumbs, Parmesan cheese, garlic powder, salt, pepper, and paprika. Set aside.
- Use a thin, sharp knife to slice each chicken breast in half lengthwise to create two thin fillets. Place the chicken breasts between two pieces of plastic wrap on a cutting board, and gently pound to about ⅜-inch with a meat tenderizer.
- Brush both sides of the chicken fillets with mayonnaise to evenly coat. Dredge each of the chicken fillets in the breadcrumb mixture and place on a baking sheet sprayed with cooking spray. Bake for 17-20 minutes or until cooked through and the outsides are golden and crispy.
Notes
- Fresh garlic can replace garlic powder; finely mince or press one clove for more pronounced flavor.
- Regular breadcrumbs combined with Italian seasoning can substitute Italian-seasoned breadcrumbs.
- Mayonnaise for coating can be swapped with 4 tablespoons of melted butter for a different texture.
