Parmesan-Herb Baked Salmon

Parmesan-Herb Baked Salmon features a wild salmon fillet topped with a creamy mixture of light mayonnaise, grated Parmesan cheese, minced garlic, and fresh chopped herbs including dill, parsley, basil, and chives. Partially baking the fish before spreading the topping allows even cooking, finishing with a broiled browned crust. The result is moist, tender salmon with a flavorful, herbaceous crust.

Description

The recipe calls for a 2-pound wild salmon fillet with skin, about 1.5 inches thick. After preheating the oven to 425°F, a blend of light mayonnaise, finely grated Parmesan, minced garlic, and several fresh herbs is mixed to create a flavorful topping. The salmon is placed skin-side down on a parchment- or foil-lined baking sheet for easy cleanup.

The fish is partially baked covered with parchment or foil for 8 minutes to start cooking gently. Then the cover is removed and the Parmesan-herb mixture is evenly spread over the exposed surface. The salmon returns to the oven uncovered and bakes until the topping is golden brown and the salmon flakes easily with a fork, typically 15 to 18 minutes depending on thickness. An internal temperature of 135°F confirms doneness.

The final dish balances the richness of salmon with the sharp, savory notes of Parmesan and fresh herbs, while garlic adds pungency and depth. The topping forms a delicate crust while keeping the fish moist underneath. This method ensures both tenderness and a flavorful finish, suitable for serving with simple sides like steamed vegetables or rice for a well-rounded meal.
