Parmesan Pesto Roasted Cauliflower
Description
This recipe prepares cauliflower florets that are coated with a few tablespoons of pesto along with freshly ground salt and pepper. The florets are spread in a single layer on a foil-lined sheet pan and roasted at 400°F. After initial roasting, the cauliflower is flipped and sprinkled with shredded Parmesan cheese, then placed back into the oven to allow the cheese to melt and develop a light golden color.
Once out of the oven, the roasted cauliflower is finished with a squeeze of fresh lemon juice, which provides a bright acidity to balance the richness of pesto and Parmesan. Additional dollops of pesto and Parmesan can be added for extra flavor and presentation if desired.
The result is cauliflower with tender interiors and flavorful, slightly crisp edges accented by herbaceous pesto and salty Parmesan. It works well as a side dish to complement meats or other mains, adding a fresh twist to roasted vegetables.
Ingredients
- 1 cauliflower head, cut into florets
- 3-4 tablespoons pesto
- salt fresh ground, to taste
- black pepper fresh ground, to taste
- 1/4 cup Parmesan Cheese shredded
- 1/2 lemon juiced
Instructions
- Preheat oven to 400° F. Line a rimmed sheet pan with foil for less clean up if desired. Place the cauliflower florets onto the sheet pan and dollop on the pesto. Sprinkle with salt and pepper.
- Use clean hands to toss the cauliflower around until it's coated in pesto. Spread the cauliflower into a single layer and place it on the middle rack of the oven. Roast the cauliflower for 12-15 minutes then remove from the oven. Flip the florets over with a spatula and sprinkle on the parmesan cheese. Place it back into the oven to roast for another 10-12 minutes.
- Remove the cauliflower from the oven and place it on a serving platter or in a bowl. Squeeze the lemon juice over the cauliflower. Dollop on extra pesto and sprinkle with more parmesan cheese if desired.
