Description

This risotto begins by cooking bacon strips until just cooked but not crispy, leaving the flavorful fat in the pan. Shallots and arborio rice are added and lightly browned before gradually incorporating simmering chicken broth one cup at a time. Each addition is absorbed fully, allowing the rice to release starch and develop a creamy consistency over 20-30 minutes.

Frozen peas and the cooked bacon are stirred in toward the end, heating through gently. Parmesan cheese is folded in last to enrich the dish with a salty, nutty finish. The combined elements create a warm, hearty risotto with a mix of sweetness from peas and savory depth from bacon and cheese.

This dish is best served immediately while warm and creamy, suitable as a complete meal or as an accompaniment to other proteins. The texture balances the al dente rice with softer additions, making it enjoyable as a comforting option for dinner or lunch.

  • 8 Bacon cut into 1/2 inch strips, strips
  • 2 shallot large
  • 12 ounces peas frozen
  • 1 1/2   cups arborio rice
  • 5   cups chicken broth
  • 1/2 teaspoon salt
  • 1/2 cup Parmesan Cheese

Instructions

  1. In a large skillet, cook bacon over medium-high heat until cooked, but not crispy, approximately 10 minutes. Using a slotted spoon, remove bacon while reserving bacon fat in pan. 
  2. Add shallots and arborio rice, browning for 4-5 minutes. 
  3. At the same time, bring 5 cups of chicken broth to a simmer over low heat in a separate saucepan.
  4. Ladle one cup of simmering broth into arborio and stir. Cook until absorbed. Continue to add 1 cup of simmering broth at a time, waiting until each addition is absorbed before adding the next, until all broth is gone. This process takes about 20-30 minutes. 
  5. Add bacon, frozen peas and salt, cooking for 3-4 minutes until fully warmed. 
  6. Lastly, stir in Parmesan cheese. Serve hot.
