This recipe cooks penne pasta to al dente alongside broccoli florets added in the final minutes to prevent overcooking. Separately, garlic and dehydrated chili peppers are gently browned in olive oil, infusing the oil with a fragrant, spicy essence. Combining the drained pasta and broccoli with the flavored oil plus reserved starchy pasta water creates a gently sauced, cohesive dish.
The mild heat from chili peppers complements the mellow garlic and the earthy broccoli, while the olive oil provides richness. The simple ingredients count on technique—such as timing adding broccoli and careful toasting of garlic—to achieve a pleasing flavor balance and texture.
This is a light entrée that can be served with vegan Parmesan or additional chili flakes for those who prefer more spice. It works well by itself or alongside a salad or protein.
Ingredients
- 1 pound penne pasta or pasta of choice
- 1 broccoli cut into florets, large
- ¼ cup extra virgin olive oil
- 4 cloves garlic minced
- 6-8 chili peppers or to taste, dehydrated
- ¼ cup water reserved pasta water
Instructions
- Bring a large pot of generously salted water to boil and add your pasta, cooking according to package directions for al dente pasta. Add the broccoli to the pot when there are 8 minutes left to cook your pasta so the broccoli does not overcook. *See notes* Drain pasta and broccoli once cooked, reserving ¼ cup of the pasta water.
- Meanwhile, add the olive oil, garlic and peppers to a large skillet and sauté over medium heat until peppers and garlic are slightly browned, approx. 5 minutes. Add the reserved pasta water, your pasta and broccoli to the pan. Sauté everything together, constantly mixing for 1-2 minutes.
- Serve with extra chili flakes or Vegan Parmesan Cheese if desired.
Notes
- If pasta cooking time is longer (e.g., 13 minutes), add broccoli after initial 5 minutes to avoid overcooking the florets.
