Description

This recipe begins by gently cooking chopped onion in olive oil until softened, followed by garlic and crushed red pepper flakes to build a fragrant base. Pureed San Marzano-style canned tomatoes then simmer until thickened, allowing the flavors to concentrate. Fresh chopped basil is added at the end for herbaceous brightness.

Spaghetti is cooked al dente, and reserved pasta water is incorporated into the sauce to help it cling to the noodles. Butter and finely grated Parmesan cheese enrich the sauce, making it creamy without heavy cream.

The finished dish is plated and garnished with additional basil leaves and Parmesan cheese. It balances acidity and subtle heat with herb notes, making it a straightforward yet satisfying pasta entree.

  • ¼ cup olive oil
  • 1 yellow onion chopped, medium
  • 5 garlic minced, cloves
  • 1/4 teaspoon red pepper flakes crushed
  • 1 28- ounce whole peeled tomatoes puréed in a food processor or blender, canned, San Marzano
  • 1/2 teaspoon kosher salt
  • 1/4 cup basil chopped
  • 12 ounces spaghetti
  • 2 tablespoons butter cut into pieces, unsalted
  • ¼ cup Parmesan Cheese finely grated

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the onion and cook, stirring occasionally, for 10 minutes or until the onion is soft. Add the garlic and red pepper flakes and cook for 3 minutes. Stir in the puréed tomatoes and season with salt.
  2. Cook the sauce until it starts to thicken, stirring occasionally. This will take about 20 minutes. When the sauce has thickened, stir in the fresh basil.
  3. Bring a large pot of salted water to a boil. Cook the pasta until al dente, according to package instructions. **Reserve 1/2 cup of the pasta water and then drain the pasta.**
  4. Place the pasta back in the large pot, add the tomato sauce and hot pasta water. Stir until the sauce coats the pasta. Add butter and Parmesan cheese and toss until butter and cheese are melted. Plate the pasta and garnish with basil and Parmesan cheese, if desired.
