Description
This recipe begins by melting butter and gently cooking finely chopped onion until translucent. Minced garlic, fresh roughly chopped basil, and optional dried herbs like basil, rosemary, sage, thyme, or Herbs de Provence are added and cooked briefly to release their flavors. Heavy cream is poured in and simmered for 5 to 7 minutes until thick enough to coat the back of a spoon.
The sauce is then blended using a food processor, blender, or immersion blender to achieve smoothness. Once blended, lemon juice, salt, and freshly ground black pepper are added and the sauce is brought back to a simmer. The final sauce is poured over cooked pasta—about 500 grams in weight—or alternatively served atop cooked chicken.

Ingredients
- 1 tbsp butter
- 1 onion finely chopped
- 2-3 garlic minced, cloves
- 1 cup basil roughly chopped, fresh
- 1 tsp dried herbs basil, rosemary, sage, thyme or Herbs de Provence all work well, of your choice
- 1 cup heavy cream aka whipping cream
- 1-2 tsp lemon juice
- salt to taste
- black pepper to taste
- 500 g pasta cooked
Instructions
- Melt the butter in a pan then add the onion. Cook until soft and translucent.
- Add the garlic, basil and dried herbs (if using) and cook for another 30 seconds.
- Pour in the cream and allow to come to a simmer. Simmer for 5-7 minutes until the sauce covers the back of a spoon easily.
- Transfer sauce to a food processor or blender (or use an immersion blender) and blend until smooth.
- Pour the sauce back into the pan and add lemon juice, salt and pepper to taste. Bring to a simmer and add cooked pasta or serve over cooked chicken.
