  • 2 tablespoons olive oil
  • 2 garlic cloves
  • 1 cup pancetta Bacon
  • 1/4 Parmesan Cheese or pecorino cheese

Instructions

  1. Begin by cleaning the cauliflower under running water.

  3. Cut the garlic into rounds, remembering to remove the garlic core to make it more digestible, and set aside.
  4. In a high-sided pan put the bacon and let the fat release. After about 3 minutes, add the garlic and let it brown.

  8. Meanwhile, with the help of a fork, mash some of the cauliflower florets and add some of the cooking water. Cook on a low heat. When the pasta is al dente, transfer it to the pan with the cauliflower mixture
  9. Add half a cup of the pasta cooking water and mixes well.
  10. Finally, add the parmesan and basil with the heat off and give it a stir until the cheese melts.
  11. Serve it hot.
