This recipe uses 4 cups of chicken broth as the cooking liquid for small pasta shapes such as pastina, orzo, or stelline. The broth is brought to a boil and the pasta is added, then simmered gently to prevent evaporation so enough broth remains to provide moisture and flavor. Ingredients
- 4 cups chicken broth or chicken stock
- 2 cups small pasta pastina/stelline/orzo, shapes
- ½ tick butter
- ¼ cup Parmesan Cheese grated
- black pepper
- salt you probably won't need any, to taste
- basil parsley works well too, fresh
Instructions
- Bring the chicken stock to a boil.
- Add the pasta and stir well
- Turn the heat down to a very gently simmer and cook the pasta as per the packet instructions. Ensure you stir it during the cooking as you are only using a small amount of stock. (see notes)
- Once the pasta is cooked, remove it from the heat and stir in the butter.
- Use a slotted spoon to divide the pasta between the serving bowls.
- Pour over the chicken stock. (See notes)
- Add the parmesan, plenty of black pepper and garnish with your fresh herbs.
Notes
- Cook pasta over very low heat to prevent broth evaporation and maintain enough liquid to cook pasta fully.
- If broth reduces too much, add boiling water cautiously to avoid diluting chicken flavor.
- Adjust the amount of buttery broth served with the pasta according to taste preferences.
