Pata Tim Recipe

Pata Tim is a Filipino braised pork leg dish slow-cooked in a savory-sweet sauce of soy, brown sugar, and aromatics including star anise and shiitake mushrooms. The pork becomes tender and flavorful, accompanied by baby bok choy added near the end for a fresh vegetable touch. This hearty meal combines deep umami, sweetness, and fragrant spices, suitable for sharing at a family meal.

Description

Pata Tim involves broiling a pork leg first, then simmering it in a seasoned broth made of soy sauce, brown sugar, sesame oil, cooking wine, star anise, whole black peppercorns, and pork bouillon until the meat becomes tender. Shiitake mushrooms are added during the cooking process to infuse earthy flavors, and the dish is finished by thickening the sauce with cornstarch and incorporating baby bok choy for a mild, crisp contrast.

The resulting pork has a tender texture enhanced by the rich, sweet-savory sauce with aromatic notes from star anise and peppercorns. The sauce's balance of sweetness and depth complements the meaty flavors, while baby bok choy brightens the dish with freshness. This dish is typically served as a main course with steamed rice.
