Ingredients
- 8 ounces cream cheese at room temperature
- 1 cup heavy cream
- ¼ cup mascarpone cheese
- ½ cup Swerve confectioners
- ½ teaspoon vanilla extract
- strawberries
- blueberries

Instructions
- Whip the heavy cream in a bowl to soft peaks. In a separate bowl, add the cream cheese and whip using a hand mixer. Mix in the mascarpone, swerve confectioners and vanilla extract.
- Then mix in the whip cream and blend until smooth and creamy.Add a layer of chopped strawberries to the bottom of a dessert glass.
- Pipe or dollop the cheesecake mousse over the strawberries. Add some blueberries over the top. These can be served in the glass or cup of your choice.
Notes
- I like using a little mascarpone in this because it adds a great creaminess, without a strong flavor or extra carbs. If you don't have mascarpone cheese, you can sub with more cream cheese.
- The cheesecake mousse can serve anywhere from 6 servings on up. It all depends on the glass or cup you decide to serve it in.
- *Macros do not include the berries. Be sure to adjust according to the number of servings and amount of berries that you use.
