For the Bars:

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoons salt
  • 4 large egg
  • 1 ⅔ cups granulated sugar
  • 1 cup vegetable oil
  • 16 ounces pumpkin puree solid pack

For the Frosting:

  • 3 ounces cream cheese softened
  • ½ cup butter softened, salted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1-2 tablespoons milk 2%
  • pecan optional, chopped, for topping

Instructions

Make the Bars:

  1. Preheat the oven to 350ºF. Spray a 10x15x1" baking pan with nonstick cooking spray. 
  2. In a medium bowl, combine flour, cinnamon, baking powder, baking soda and salt. Set aside.
  3. In a separate bowl, combine eggs, sugar, oil and pumpkin using an electric mixer on medium speed. 
  4. Gradually add the dry ingredients to the pumpkin mixture and mix well. Scrape sides of the bowl as needed.
  5. Pour into the prepared pan. Bake for 25-30 minutes or until the cake tests done.

Make the Frosting:

  1. In a bowl, use a hand mixer to cream together the cream cheese and butter. Add the sugar, vanilla and milk. Mix until smooth.
  2. Spread frosting over cooled bars. Sprinkle with chopped pecans if desired.
