Peach Bars Recipe | Add a Pinch

Peach bars make a wonderful make-ahead breakfast, delicious snack, or an amazing dessert. Made with shortbread and a oat crumble, these peach bars are a favorite!

For the Crust:

  • 1 shortbread crust recipe

For the Filling:

  • 1 peach jelly half-pint jar

For the Crumb Topping:

  • 1/4 /4 cup all-purpose flour
  • 1/4 /4 cup brown sugar packed
  • 3 tablespoons butter
  • 1/4 /4 cup oats quick-cooking
  • 1/4 /4 cup walnuts chopped
  • pinch kosher salt

Instructions

For the Crust:

  1. Make according to shortbread crust instructions. Place into a 9/x13 pan.

For the Filling:

  1. Spread peach jelly evenly all over the crust.

For the Topping:

  1. Combine flour, sugar, and butter in a medium bowl with a pastry blender or fork. Stir in oats, walnuts and salt.
  2. Spread crumb topping evenly over filling.
  3. Bake at 350 degrees for 15-20 minutes until the top is lightly browned.
  4. Remove from the oven and allow to cool completely before cutting, about 45 minutes to an hour.
  5. Cut in equal rows of 3 x 3 or 4 x 4 depending on how large you would like your bars.
  6. Cover tightly with plastic wrap, under a cake dome or store in an airtight container.
