Peach Blueberry Cobbler

And it keeps perfectly for lunches the rest of the week!  This cakey delicious, sweet, homey cake that combines two perfect fruits into cobbler form is almost too perfect!

Ingredients

For the Filling

  • 3 Cups Blueberry
  • 3 Cups peaches peeled and pitted
  • 1 ¼ Cup sugar
  • ¼ cup flour

For the Crust

  • 2 Cups all-purpose flour
  • 1 Cup sugar
  • 1 tbs baking powder
  • ½ teaspoon salt
  • ½ Cup milk whole
  • ½ Cup cream
  • 2 butter unsalted, melted, sticks
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cinnamon
  • ¼ teaspoon black cardamom

Instructions

  1. Preheat the oven to 350. Mix the fruit, sugar and flour together for the filling and pour into a 3 quart baking dish.
  2. In a stand mixer or with a hand mixer, combine the flour, sugar, baking powder and salt together slowly. Add the milk, cream and butter slowly and then beat on medium for 20 secs.
  3. Spoon the batter over the top of the fruit and make sure it covers completely. Sprinkle the top with the nutmeg, cinnamon and cardamom.
  4. Place the baking dish on a baking sheet and place in the middle of the preheated oven. Bake x 45 minutes and then check every 5 minutes until golden brown and the batter is set and doesn’t jiggle any longer when you shake the pan.

Notes

  • You could substitute out some strawberries or even blackberries for the blueberries.
