Peach Cake

This peach cake features a tender butter-based batter flavored with vanilla, cinnamon, and lemon zest, topped with ripe peach wedges pressed into the batter before baking. The cake yields a moist crumb with warm spice and citrus notes, complemented by juicy peach slices providing freshness and natural sweetness. An optional brush of peach or apricot preserves after baking enhances the fruit flavor and adds a subtle glaze.

Description

The Peach Cake recipe builds on a creamed butter and sugar batter mixed with eggs, vanilla, and bright lemon zest. Flour combined with baking powder, salt, and cinnamon creates a softly spiced base that supports slices of fresh, ripe peaches arranged on top before baking. The peaches soften during baking, infusing the cake with their distinctive flavor and moisture.

Once baked at 350°F, the cake presents a delicate crumb, balanced between sweetness and warm spice accented by lemon zest. The exposed peach wedges lend a juicy texture and fruity aroma to each bite. This method avoids peeling for ease and a rustic appearance.

Serving this cake slightly warm or at room temperature allows the peach flavors to shine. Adding a glaze made by warming peach or apricot preserves and brushing it on top enhances the cake’s moisture and visual appeal.

Ingredients

Servings
  • ½ cup butter 1 stick, 110g, softened
  • cup granulated sugar (135g)
  • 2 egg large
  • 1 teaspoon vanilla
  • lemon zest of 1
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ teaspoon cinnamon
  • 3 peach pitted and sliced into wedges, no need to peel!, ripe
  • ¼ cup peach preserves optional, or apricot preserves

Instructions

  1. Preheat your oven to 350°F. Grease and flour a 9-inch round springform pan. Cut a circle of parchment paper that matches the bottom of the pan, and place in the pan.
  2. In the bowl of an electric mixer, beat ½ cup softened butter. Beat in ⅔ cup sugar, and then add 2 eggs one at a time, beating until thoroughly combined. Beat in the vanilla and lemon zest.
  3. Add 1 cup flour, 1 teaspoon baking powder, ¼ teaspoon salt, and ½ teaspoon cinnamon. Stir on low speed until you end up with a smooth, thick batter. Spread the batter evenly into your prepared pan––it will be a fairly thin layer, but it will rise! Arrange the peach wedges over the cake, and lightly press them into the batter.
  4. Bake for 45-50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven, and allow to cool slightly. If you want an extra hit of sweetness and flavor, brush the cake with a ¼ cup of peach or apricot preserves (warm it up first by microwaving it for 20-30 seconds).
  5. Serve warm or at room temperature––either on its own, or with whipped cream and more fresh peaches!
