Peach Cobbler
Description
This Peach Cobbler begins by simmering peeled, pitted, and sliced peaches with sugar, cornstarch, lemon zest, and juice, which thickens the fruit juices into a bubbling, glossy filling. Butter cubes are melted in the baking dish until bubbly, forming a rich base for the batter.
The topping batter blends flour, baking powder, salt, sugar, egg, vanilla, and milk until just combined to preserve tenderness. It is poured over melted butter, then the peach filling is spooned evenly on top before baking. The cobbler bakes at 375℉ until the batter is set and golden brown with gently bubbling fruit beneath.
Served warm, this cobbler balances soft, juicy peach filling with a tender, buttery crust. It pairs beautifully with vanilla ice cream or whipped cream to add cold creaminess contrasting the warm fruit and cake-like topping.
Frozen or canned peaches may be used when fresh peaches are unavailable, but excess syrup or liquid should be drained first. Spices such as cinnamon or nutmeg can be added to the filling for additional warmth and complexity. The cobbler stores and freezes well when wrapped properly to prevent freezer burn. Reheat in the oven for best texture.
Ingredients
- 4 cups peaches ripe, peeled, pitted and sliced
- ½ cup sugar
- 2 tablespoon cornstarch
- 1 tablespoon lemon zest
- 1 tablespoon lemon juice
Cobbler
- ½ cup butter unsalted, cut into cubes
- 1 cup all-purpose flour all purpose
- 1 tablespoon baking powder
- ¼ teaspoon salt
- ½ cup sugar granulated
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup milk
Instructions
- Preheat the oven to 375℉.
- Add the peaches, sugar, cornstarch, lemon zest, and lemon juice to a saucepan over medium heat. Bring the mixture to a bubble and cook for 5 minutes, stirring often, until the peaches begin to soften.
- Spread the cubes of butter evenly in a 9x9-inch baking dish. Place in the preheated oven and leave it in until the butter has melted and is bubbly.
- Add the flour, baking powder, salt, sugar and egg, vanilla, and milk to a bowl and whisk just until you no longer see any flour.
- Pour the batter into the baking dish with the melted butter. Pour the peaches evenly over the batter.
- Transfer the baking dish to the oven and bake for 40-45 minutes or until the cobbler topping is set and golden brown. Serve warm with a scoop of vanilla ice cream.
Notes
- Canned or frozen peaches can replace fresh; drain excess syrup or liquid before using.
- Add a pinch of cinnamon or nutmeg to the filling for extra spice if desired.
- Serve warm, ideally with vanilla ice cream or whipped cream for contrast.
- Reduce sugar in peach filling to adjust sweetness if a less sweet dessert is preferred.
- Use a 9x9-inch baking dish or similar sized oven-safe dish; baking time remains the same.
- Freeze cobbler well wrapped in plastic and foil up to 3 months; reheat in oven before serving.
