Peach Cobbler
Description
This Peach Cobbler combines sliced peaches—fresh or frozen, peeled or unpeeled—with sugar, a thickener like ClearJel or cornstarch, and almond or vanilla extract for added aroma. The fruit filling is baked briefly to heat through and activate thickening. Meanwhile, the topping is prepared by pulsing together flour, sugar, baking powder, salt, and butter until crumbly, then incorporating buttermilk to form a soft dough.
The dough is dropped in small mounds over the fruit filling, allowing the peaches to peek through. Baking continues until the topping is golden brown and the filling is hot and bubbly, with a fully cooked underside in the center. This cobbler offers a luscious peach filling with a tender biscuit crust that is best served warm, frequently accompanied by ice cream.
