Peach Crumb Bars

Peach Crumb Bars feature a buttery crumb crust topped with a sweetened peach filling spiced with cinnamon and almond extract. The dessert is baked until the crust is golden brown and crumbly, combining soft fruit with a textured topping suitable for slicing and serving as bars.

Description

The recipe begins with preparing a crumbly crust from flour, sugar, baking powder, salt, cinnamon, butter, egg, and vanilla. This mixture is divided, with most pressed into a pan as the base and the rest reserved for topping. The crust’s texture is tender and buttery, providing structure and crumbly texture.

The filling uses peeled and diced peaches combined with lemon juice and almond extract for brightness and aroma. A blend of sugar, cornstarch, and cinnamon coats the fruit, thickening juices during baking and adding warm spice notes. The topping creates a streusel layer that becomes crisp and golden.

These bars are baked until the topping is lightly browned and set. Cooling completely before cutting helps retain shape and allows flavors to meld. This bar is suitable as a dessert or sweet snack, especially when peaches are in season.

Notes suggest serving these fresh or within a day, as longer storage can soften the crust from the filling’s moisture. Making them too far ahead is not recommended to retain optimal texture.

Ingredients

Servings

Crust:

  • 3 cups flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 /2 teaspoon salt
  • 1/2 /2 teaspoon cinnamon
  • 1 cup butter unsalted
  • 1 large egg
  • 1 teaspoon vanilla extract

Peaches:

  • 5 cups peach peeled and diced
  • 1 tablespoon lemon juice
  • 1 teaspoon almond extract
  • 1/2 /2 cup sugar
  • 1 tablespoon cornstarch
  • 1/2 /2 teaspoon cinnamon

Instructions

  1. Preheat oven to 375 degrees and grease a 9x13 inch pan.

For the crust:

  1. Whisk together the flour, sugar, baking powder, salt, and cinnamon. Cut in the butter with a fork until mixture is crumbly. Mix in the egg and vanilla. *Note: If you're using a food processor you can just add everything to the food processor and pulse until crumbly. Then add in the egg and vanilla and process until combined.
  2. Reserve 2 cups of the crust mixture and press the remaining mixture into the prepared pan.

For the peaches:

  1. Toss peaches with lemon juice and almond extract. Whisk together the sugar, cornstarch, and cinnamon. Toss to coat.
  2. Pour peaches over the bottom crust. Sprinkle reserved dough on top of peaches.
  3. Bake for 35-45 minutes or until topping is lightly browned. Cool completely and cut into bars.

Notes

  • It is best to serve Peach Crumb Bars the day of or the day before baking to prevent the crust from becoming soggy.
  • Cooling completely before cutting helps bars hold their shape and develop flavor.
  • Peeling and dicing peaches evenly ensures uniform cooking and texture in the filling.
