Peach Hand Pie Recipe

These sweet Peach Hand Pies are bursting with homemade peach pie filling wrapped in a flaky pie crust and finished off with a dusting of cinnamon sugar. The perfect summer dessert!

Ingredients

  • 2 pie crust refrigerated sheets
  • 3 cups peach peeled and diced fresh
  • ½ cup granulated sugar divided, plus 2 tablespoons
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 2 teaspoons ground cinnamon divided
  • 2 tablespoons cornstarch
  • 1 egg beaten (for egg wash)

Instructions

  1. Preheat the oven to 375°F (190°C). And then line a baking sheet with parchment paper.
  2. In a medium-sized bowl, mix the diced peaches, ½ cup of granulated sugar, lemon juice, vanilla extract, 1 teaspoon of ground cinnamon, and cornstarch untilcombined.
  3. On a lightly floured surface, roll out one dough sheet to about 1/8 inch thick. Cut out circles using a 4-inch round cutter or glass.
  4. Place 1 heaping tablespoon of the peach filling in the center of each pie crust circle.
  5. Fold the dough over to create a half-moon shape and press the edges with a fork to seal.
  6. Place the hand pies on the prepared baking sheet.
  7. Mix the remaining sugar and cinnamon.
  8. Brush the tops of the hand pies with the beaten egg and sprinkle with cinnamon sugar.
  9. Bake for 20-25 minutes or until the pies are golden brown and the filling is bubbling.
  10. Let cool on a wire rack before serving.

Notes

  • If you don't have a cookie cutter, a glass or the rim of a bowl will work just as well.
  • Some of the filling may ooze out of the pie during the baking process. This is normal so don't stress about it.
  • You could also make a simple glaze with powdered sugar and milk for the top of these instead of the cinnamon sugar.
  • To lower the carbs in this recipe, use a sugar free alternative like monk fruit in place of granulated sugar.  You can also make this low carb coconut flour pie crust
