Peach Pie

Peach Pie blends tender peach slices coated in a cinnamon-spiced thickened sauce, poured into a pre-baked pie crust for baking or chilling. The cooking sauce, made from butter, sugar, cornstarch, water, and vanilla or almond extract, thickens on heat and softens the peaches when poured hot over them. This balance of cooked fruit with a smooth, thick sauce inside a flaky pie crust produces a comforting dessert ideal for warm or chilled serving.

Description

This Peach Pie recipe uses fresh peeled and sliced peaches mixed with a sugar, cinnamon, and cornstarch blend. Butter and water heated together create a base for the sugar mixture, which thickens into a sauce as it cooks. This hot sauce is poured directly over the peach slices, cooking them slightly and evenly coating them with a glossy, spiced layer. The mixture is then flavored with vanilla or almond extract and transferred to a pre-baked pie crust.

The pie can be served warm—allowing the sauce to remain soft and flowing—or chilled, where the filling firms up from the cornstarch. The cinnamon adds warmth, while the vanilla or almond extract complements the peaches' sweetness. The contrast between the tender cooked fruit filling and flaky crust creates a satisfying texture combination.

Residual peach juice from slicing can be incorporated into the water portion used to make the sauce or strained off, depending on preference. The warmth of the sauce when poured directly onto the peaches helps to soften them slightly, enhancing their texture and melding the flavors.

Serving the pie warm with a scoop of vanilla ice cream is a recommended option to balance the sweet-tart fruit filling. Chilling the pie before serving allows flavors to meld and the filling to set more firmly.
