Description
This Peach Pizza starts with a pre-baked crust brushed with olive oil to prevent sogginess. Mozzarella cheese, crumbled gorgonzola, and minced shallots are spread evenly before layering thin slices of peach. Baking at 400°F melts the cheeses and crisps the crust while warming the peaches.
After baking, the pizza is immediately topped with a balsamic reduction drizzle and fresh arugula, adding bright acidity and bitter-green contrast to the sweet and creamy base. The interplay between the sweet peaches, tangy cheese, and balsamic glaze creates a balanced flavor profile.

Ingredients
- 1 pizza crust pre-baked
- 2 teaspoons extra-virgin olive oil
- 1/2 cup mozzarella cheese , shredded
- 1/3 cup gorgonzola cheese , crumbled *
- 2 tablespoons shallot minced
- 1 1/2 peaches , thinly sliced and pitted (more or less depending on the size of the peach and your crust)
- 2 tablespoons balsamic glaze
- 1 cup arugula fresh
Instructions
- Preheat the oven and the pizza stone (or pizza baking sheet) to 400°F.
- Brush the extra virgin olive oil evenly over crust to create a barrier and prevent cheeses from sogging up the crust. Sprinkle the mozzarella, shallots and Gorgonzola evenly over crust. Top with the peach slices in whatever pattern or non-pattern you desire.
- Bake at 400° for 11 minutes or until the crust browns and the cheese is bubbly.
- Remove the pizza and immediately drizzle the balsamic reduction sauce evenly. Place a fresh arugula in the center of the pizza, slice and serve.
