Peach Streusel Muffins

These peach streusel muffins are fluffy, light, and full of chopped fresh peaches, all topped with a sugary streusel.

For muffins

  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter melted
  • ¼ cup vegetable oil
  • 1-½ cups whole milk
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 3 cups all purpose flour
  • 1 tablespoon baking powder
  • 1-½ cups finely chopped peaches

For streusel

  • ¼ cup all purpose flour
  • ¼ cup light brown sugar
  • 2 tablespoons butter melted

Instructions

For muffins 

  1. Preheat the oven to 425 degrees F and line 18 muffin tins with paper liners (or spray them with nonstick baking spray). 
  2. In a large bowl, whisk together the granulated sugar, melted butter, and vegetable oil. 
  3. Next whisk in the milk, eggs, and vanilla. 
  4. Whisk in the flour and baking powder. When the flour is almost fully incorporated, add the peaches and gently fold them into the batter. 
  5. Divide the batter between the muffin pans, filling each one completely full. 
  6. Top the muffins with the streusel (below). 
  7. Bake at 425 degrees F for 5 minutes. Then reduce the oven temperature to 350 degrees F and bake for 15 minutes. 
  8. Remove the muffins to a wire rack and allow them to cool completely before storing.
  9. Store any leftovers in an airtight container at room temperature for up to three days.

For the Streusel 

  1. In a small bowl, mix together the flour, brown sugar, and melted butter until the mixture resembles wet sand. Set aside until ready to use. 

Notes

  • Peaches are the key to making these muffins delicious! There’s nothing like fresh, ripe peaches but if they aren’t in season, you can also use thawed frozen peaches.
