Peach Tomato Bruschetta

Toasted baguette slices topped with juicy peaches, tomatoes, basil, and a drizzle of honey or balsamic. If you want to be extra, you can also spread the bread with whipped cottage cheese or whipped feta, SO good!

Ingredients

  • 1 pint grape tomato chopped
  • 3 peach diced, medium
  • 1 tablespoon olive oil
  • 2 to 3 tablespoons basil finely chopped, fresh
  • salt to taste, kosher salt and freshly ground
  • black pepper to taste, kosher salt and freshly ground
  • 1 French baguette cut into 1/2-inch thick slices
  • olive oil for brushing bread
  • 2 cloves garlic peeled
  • cottage cheese optional but so good, whipped
  • honey for drizzling (or use balsamic glaze, or hot honey

Instructions

  1. Preheat oven to 450 degrees F.
  2. In a medium bowl, combine the tomatoes, peaches, 1 tablespoon olive oil, basil, salt, and pepper. Let sit while you toast the bread.
  3. Place the baguette slices on a large baking sheet. You might need to use 2 sheets. Brush the tops of the baguette slices with olive oil. Place the baking sheets in the oven and bake until bread slices are toasted, about 5 minutes. Remove from the oven and rub the garlic over the toasted bread, pressing slightly into the bread.
  4. Spread each piece of bread with whipped cottage cheese (or whipped feta), if using. Top with peach tomato topping and drizzle with honey. Serve!

Notes

  • You can also spread the bread with whipped feta. If you don't want to use honey, you can drizzle with balsamic glaze.
