Description

This Peanut Brittle recipe uses a combination of sugar, light corn syrup, and water cooked carefully on the stovetop to the hard crack temperature of 300°F. Butter is slowly incorporated into the boiling syrup before adding roasted peanuts, which are stirred continuously to coat them and prevent burning. Once the proper temperature is reached, the mixture is removed from heat and immediately combined with vanilla and baking soda to add flavor and a slight bubbling effect that makes the candy lighter.   • 1 cup sugar
  • ½ cup light corn syrup
  • ¼ cup water
  • ½ cup butter cubed
  • 1 ½ cups peanuts unsalted, roasted
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla

Instructions

  1. Line a 15 X 10-inch baking pan with parchment paper and set aside.
  2. Place 1 cup sugar, ½ cup light corn syrup, and ¼ cup water in a 2-quart pot with a candy thermometer attached and bring to a boil over medium heat. Slowly stir in ½ cup butter a little at a time. Let the mixture boil, stirring occasionally.
  3. When the sugar mixture reaches 250 degrees Fahrenheit, or when you drop a little of it into cold water it forms pliable strands, add in 1 ½ cups unsalted roasted peanuts. Stir constantly for 7-10 more minutes until the mixture reaches 300 degrees Fahrenheit, or when dropped in water it forms brittle strands. Immediately remove from heat, add 1 teaspoon vanilla and 1 teaspoon baking soda, and stir until evenly combined. Pour the brittle onto the baking sheet and spread evenly.
  4. Let cool and set. Use a mallet or the back of a spoon to crack the brittle into pieces.
