Description
The cooking process begins by microwaving sugar and corn syrup together until melted and bubbly. Peanuts are then stirred in and heated further until the mixture turns a light brown color, signaling caramelization of sugars and roasting of peanuts. Butter and vanilla extract are added next for richness and aroma.
Finally, baking soda is mixed into the hot syrup, causing it to foam and introduce tiny air bubbles, which give the brittle its characteristic crunchy texture and light appearance. The foamy mixture is poured onto a parchment-lined cookie sheet or silicone mat to cool and harden before being broken into irregular pieces.
This candy yields about one pound and can be stored at room temperature in an airtight container for up to two months. Starting with raw peanuts helps control cooking time and prevents scorching during microwave heating.
Ingredients
- 1 cup granulated sugar
- 1/2 cup light corn syrup
- 1 cup peanut see note 1, raw
- 1 teaspoon butter
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda (see note 2)
Instructions
- Line a large cookie sheet with parchment paper or a silicone mat. In a deep microwave-safe bowl, combine sugar and corn syrup. Mix thoroughly and microwave on HIGH for 4 minutes.
- Stir in peanuts and microwave on HIGH until the mixture is light brown, about 3 to 5 minutes longer.
- Stir in butter and vanilla until combined. Microwave on HIGH until peanuts are lightly browned, about 1 to 2 minutes longer.
- Stir in baking soda until mixture is light and foamy. Pour onto prepared pan and cool 30 minutes. Break into pieces to serve and store in an airtight container.
