Description
The recipe starts by creaming room temperature butter and sugar until fluffy, then mixing in eggs, vanilla, and creamy peanut butter to achieve a smooth batter. Flour and baking powder are added last to provide structure. Two-thirds of the dough is spread evenly in a greased pan, followed by spreading the jam uniformly across that base layer. The jam is left slightly inside the pan edges to contain it during baking.
Coarsely chopped peanuts are scattered over the jam to add occasional crunch. Small spoonfuls of the remaining dough are dropped across the top, creating a textured topping once baked. The bars bake until the edges turn golden brown and the topping is lightly set. After cooling, confectioners’ sugar can be dusted on for additional sweetness and visual appeal.
These bars store well at room temperature in an airtight container for several days and allow flavor variation through different jam choices. The optional peanuts provide a satisfying contrast to the smooth peanut butter flavor. Together, the layers balance sweetness and nutty richness in a simple baked snack.
Ingredients
- 1 c. butter at room temperature
- 1 1/2 c. sugar
- 1 tsp vanilla
- 2 egg at room temperature, large
- 2 c. peanut butter creamy
- 3 c. all-purpose flour
- 1 tsp baking powder
- 1 1/2 c. jam of your choosing
- 2/3 C peanuts coarsely chopped, optional, salted
- confectioners' sugar for dusting
Instructions
- Preheat oven to 350 degrees. Grease 13x9 inch baking pan.
- Cream together butter and sugar until light and fluffy, about 2 minutes. Add eggs, vanilla and peanut butter. Mix until combined.
- Add flour and baking powder. Mix until well combined.
- Spread 2/3 of the batter mixture onto the bottom of the pan. Spread jam over the batter and sprinkle with chopped peanuts. Leave about 1/2 inch around the sides without jam. Drop the remaining dough over the jam, in about teaspoon size drops.
- Bake for about 25-30 minutes until the edges start to brown. Remove from from oven.
Notes
- Choose any preferred jelly flavor to customize the bars to your taste.
- Inclusion of chopped peanuts adds crunch, but they can be omitted for a smoother texture.
- Store bars in an airtight container at room temperature for three to four days for best freshness.
