  • 1/2 cup peanut butter
  • 1/3 cup butter softened, unsalted
  • 2/3 cup white sugar
  • 1/2 cup brown sugar packed
  • 2 egg large
  • 1 teaspoon vanilla extract
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup strawberry jam

Instructions

  1. Preheat oven to 350 degrees and spray 8x8 pan with baking spray.
  2. In stand mixer mix together peanut butter, butter and sugar on medium speed until fluffy, 2-3 minutes.
  3. Add in the brown sugar, eggs and vanilla until creamy.
  4. Lower speed to low, then add in flour, baking powder and salt until just combined.
  5. Spread mixture evenly into baking pan.
  6. Spoon in small dollops the strawberry jam onto the batter and bake for 30-35 minutes.
