Peanut Butter Ball Stuffed Cookies

Peanut Butter Ball Stuffed Cookies feature a rich peanut butter center encased in a soft cookie dough with chocolate chips. The cookies have a tender, chewy texture with a sweet and nutty filling adding extra indulgence. These cookies offer a delightful surprise inside and work well as a snack or dessert for peanut butter lovers seeking a treat with varied texture and flavor.

Description

This recipe separates the preparation of peanut butter balls from the cookie dough. The peanut butter balls are made by combining peanut butter, butter, heavy cream, powdered sugar, and vanilla, then chilled to firm up. The cookie dough combines melted butter with brown and white sugars, egg, vanilla, flour, baking soda, salt, and mini chocolate chips. Each cookie dough ball is flattened, wrapped around a peanut butter ball, and sealed before baking.

Baked at 350 degrees, the result is a soft cookie with a gooey chocolate chip texture on the outside and a creamy, rich peanut butter center. The method ensures the filling remains intact inside the baked cookie, providing a layered eating experience.

These cookies are suitable for storing in an airtight container for up to a week, making them convenient for advance preparation or sharing.

Ingredients

Servings

For the peanut butter balls

  • ¾ cup peanut butter
  • 2 tablespoons butter room temperature
  • 1 tablespoon heavy cream
  • 2 cups powdered sugar
  • 1 teaspoon vanilla

For the cookies

  • 8 tablespoons butter melted
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 2/3 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mini chocolate chips

Instructions

To make the peanut butter balls

  1. Add the peanut butter, butter, cream, powdered sugar, and vanilla to a mixing bowl and beat with a mixer on medium speed until well combined.
  2. Portion the peanut butter mixture into 12 pieces and roll each piece into a ball.
  3. Place in the refrigerator while you make the cookie dough.

For the cookie dough

  1. Preheat oven to 350 degrees.
  2. Add the melted butter, brown sugar, and white sugar to a mixing bowl and mix together until well combined.
  3. Stir in the egg and vanilla until combined.
  4. Add the flour, baking soda, and salt and stir to form a dough.
  5. Stir in the chocolate chips.
  6. Portion the cookie dough into 12 pieces. Roll each piece into a ball and then flatten into a disc.
  7. Place one peanut butter ball into the center of each piece of cookie dough and fold the sides up around, being careful to fully seal the peanut butter ball in dough.
  8. Place the cookie dough on an ungreased baking sheet about 1 1/2 inches apart from each other.
  9. Bake for 11 minutes exactly. Cookies will look slightly underdone when you remove from the oven, but will set up as they cool.
  10. Cool on the pan for at least 5 minutes before removing to a cooling rack.

Notes

  • Store the cookies in an airtight container at room temperature to maintain softness for up to one week.
