Description

This recipe starts by creaming softened butter and creamy peanut butter together until smooth, then gradually mixing in powdered sugar until a dough-like consistency is achieved. Vanilla extract adds flavor. The dough is portioned into small mounds, chilled to firm up, then rolled into smooth balls for dipping.

The peanut butter balls are dipped individually into melted semi-sweet chocolate or chocolate almond bark to coat them partially or fully depending on preference.   • 1 cup butter (2 sticks)
  • 1 cups peanut butter creamy
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 6 ounces Semi-sweet melting chocolate or melting wafers or chocolate almond bark

Instructions

  1. Use electric beaters to cream together the butter and peanut butter.  Slowly add the powdered sugar until you get a smooth consistency.  Add the vanilla and mix.
  2. Scoop about 5 dozen small peanut butter mounds onto a baking sheet and place in the freezer for about 30 minutes. Once cold, they will be easier to handle and roll into smooth balls.
  3. Meanwhile, melt the chocolate, melting wafers, or chocolate almond bark according to package instructions.
  4. Use a toothpick to dip and coat each peanut butter ball in chocolate. Allow excess to drip off and then place them on a parchment covered baking sheet and allow them to set. 
  5. Store in an airtight container in the fridge or freezer.

Notes

  • Make the peanut butter balls several days ahead and store them chilled, or freeze for long-term storage up to several months.
  • After the chocolate coating sets, store the peanut butter balls in a freezer-safe container for up to 3 months; thaw in the refrigerator before serving.
  • To achieve a glossy finish or allow longer room-temperature storage, melt paraffin wax with the chocolate and dip using this mixture.
  • You can dip balls fully in chocolate or leave some peanut butter exposed to resemble buckeye nuts.
  • For added texture and flavor, incorporate mini M&M's, chopped candies, or nuts into the peanut butter filling before dipping.
