Peanut Butter Balls Recipe
Description
This recipe mixes peanut butter, confectioners' sugar, softened butter, vanilla, and salt into a dough that's scooped into tablespoon-sized balls. The balls are chilled to firm up, then dipped into melted chocolate chips blended with shortening or coconut oil to ensure smooth coating. After dipping, the balls are set aside to harden, forming a crisp chocolate shell enveloping the rich peanut butter center.
The candies are conveniently stored in an airtight container, making them suitable to keep in the refrigerator for a week or to freeze for longer storage. They offer a handheld, sweet snack combining creamy and chocolate flavors in a simple preparation without baking.
A vegan version can be made by substituting dairy-free chocolate chips and using coconut oil instead of butter.
Ingredients
- 2 cups peanut butter
- 2 cups confectioners sugar
- 4 tablespoons butter softened, unsalted
- 1/2 /2 teaspoon vanilla extract
- 1/4 /4 teaspoon kosher salt
- 1 (12-ounce) package chocolate chips dark, milk, or semisweet
- 2 teaspoons shortening
Instructions
- Line rimmed baking sheet with parchment paper. Set aside.
- Mix together peanut butter, confectioner's sugar, butter, vanilla extract and salt with an electric mixer until well combined. Using a 1 tablespoon cookie scoop, scoop individual balls and place onto the parchment paper. Place in freezer for 15 minutes to harden.
- Melt chocolate chips and shortening or coconut oil together in microwave for 1 1/2 - 2 minutes at 50 % power.
- Dip each hardened peanut butter ball into the melted chocolate using a spoon and then place back onto the parchment paper lined baking sheet to dry.
- Store in an airtight container.
Notes
- Peanut butter balls keep well in an airtight container in the refrigerator for up to one week.
- For longer storage, freeze the peanut butter balls in a freezer-safe container for up to 7 months.
- To make a vegan version, use dairy-free chocolate chips and replace butter with coconut oil.
