Description
This Peanut Butter Bark blends melted white chocolate and peanut butter into a silky base enriched with textures from crispy rice cereal and mini marshmallows. After carefully melting the chocolate and peanut butter mixture, the cereal is stirred in and allowed to cool slightly to keep the cereal crispy. Mini chocolate chips and marshmallows are then folded in to add sweet bursts and softness.
The mixture is pressed gently into a greased pan to maintain airy crunch and then chilled until firm. Once set, it can be sliced into squares or bars. The snack balances creamy, sweet peanut butter and white chocolate with the light crunch of rice cereal and the chewiness of marshmallows, making it enjoyable for kids and adults alike.
Wrap pieces individually to share as gifts or keep them stored in an airtight container to maintain freshness. Variations include adding chopped candy or peanut butter cups for more chocolate or peanut flavor.
Ingredients
- 20 ounces white chocolate melting wafers 2 bags, Ghirardelli brand
- 1/2 cup peanut butter creamy
- 4 cups crispy rice cereal
- 1 cup mini chocolate chips
- 1 1/2 cups mini marshmallows
Instructions
- In a large, microwave-safe bowl, melt white melting wafers with peanut butter for about 45 seconds. It won't look like it has melted when it comes out of the microwave, but trust me, it's hot enough.
- Just stir together until all the white chocolate wafers are melted.
- Add crispy rice cereal to mixture and wait about 10-15 minutes until the mix has reached room temp. (Don't put it in the fridge, you don't want it to harden quite yet).
- Add mini chocolate chips and mini marshmallows.
- Stir until well combined.
- Grease a 9x13 baking pan. Press mixture down into the pan with a greased spoon or hand (but not TOO hard, you don't want to smash the rice cereal).
- Place in the fridge for about 30 minutes or until hardened. Cut into squares and serve!
