Peanut Butter Blondies

These peanut butter blondies are ultra gooey, thick, rich, and decadent! The chocolate and peanut butter combination is classic and so delicious. These bars take only 30 minutes from start to finish!

Ingredients

  • ½ cup coconut oil melted
  • 1 cup coconut sugar
  • ½ cup peanut butter all natural creamy
  • 1 tsp vanilla extract
  • cup almond milk
  • 1 ½ cups gluten free flour see note
  • 1 tsp baking soda
  • cup dark chocolate chips
  • ½ cup peanut butter cups cut up

Instructions

  1. First, preheat your oven to 350 degrees Fahrenheit. Line an 8 inch square pan with parchment paper.
  2. In a large mixing bowl, combine the melted coconut oil and coconut sugar. Stir together.
  3. Then, add in the creamy peanut butter, vanilla, and almond milk. Stir together.
  4. Next, add in the gluten free flour and baking soda. Stir until combined.
  5. Fold in the dark chocolate chips and cut up peanut butter cups. Reserve a few peanut butter cups for after baking. The dough will be pretty thick.
  6. Transfer the batter to the prepared pan. Smooth into an even layer.
  7. Bake for 20 to 25 minutes, or until a toothpick inserted comes out clean.
  8. Finally, remove from the oven. Garnish with extra peanut butter cups and chocolate chips. After cooling for 10 minutes, slice and serve!

Notes

  • kitchen favorites
  • If desired, replace the melted coconut oil with melted vegan butter.  If you are not vegan, feel free to use regular butter.
  • Feel free to replace the coconut sugar with brown sugar.
  • Use all natural creamy peanut butter made from only peanuts and salt.
  • If you are not gluten free, all purpose flour works well too.
  • The dough will be pretty thick.
  • Do not bake too long.  These bars really only need about 20 minutes.
