Peanut Butter Blondies
Description
This recipe for Peanut Butter Blondies uses creamy peanut butter and melted butter combined with brown sugar, eggs, and vanilla to form a smooth batter. The addition of all-purpose flour and salt provides structure. The batter is spread evenly in a lined pan, and Reese's Pieces are sprinkled either before baking or on top after frosting.
Baking at 350°F for about 20-25 minutes yields blondies with a moist, chewy interior and slightly crisp edges. The optional peanut butter frosting made with creamy peanut butter, softened butter, powdered sugar, vanilla, and heavy cream adds a creamy, sweet topping that complements the dense bars.
Variations include mixing in chocolate chips or other candies for added texture and flavor. The bars can be refrigerated or frozen for storage. Serving warmed or at room temperature showcases the peanut butter notes and candy additions well.
Ingredients
Peanut Butter Blondies
- 1/2 cup peanut butter creamy
- 1/2 cup butter melted, salted
- 3/4 cup light brown sugar
- 1 egg large
- 1 egg large, yolk
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/4 teaspoon salt
Peanut Butter Frosting
- 1 cup peanut butter creamy
- 1/2 cup butter softened, salted
- 1/2 teaspoon vanilla extract
- 2 Tablespoons heavy cream
- 1 cup powdered sugar
- 1/2 cup Reese's Pieces
Instructions
- Heat oven to 350°F. Line a square 8x8 baking dish with a parchment paper sling.
- In a large bowl, whisk the peanut butter and butter together until smooth and creamy. Add the brown sugar, egg and extra egg yolk, and vanilla and mix well to combine.
- Stir in the flour and salt with a spoon, then spread into the prepared baking dish, pushing towards the edges of the pan as needed. Sprinkle with Reese's Pieces, if not planning to frost.
- Bake for 20-25 minutes until done, then remove from oven and cool completely. Do not overbake.
- Prepare the frosting by beating the peanut butter and butter together until smooth and creamy. Add the vanilla, cream and powdered sugar and beat well, then frost the peanut butter blondies in the pan and sprinkle with Reese's Pieces. Cut into squares and serve.
Notes
- Optional mix-ins like chocolate chips or peanut butter chips can be added to the batter for variety.
- For a Disneyland-style blondie, spread peanut butter on warm bars and top with extra Reese's Pieces instead of frosting.
- Store baked blondies in an airtight container at room temperature for 3-4 days or in the fridge for up to one week; allow to come to room temperature before serving if refrigerated.
- Blondies freeze well for up to 1 month; slice, freeze individually on parchment, then store in an airtight container.
- A 9x9-inch pan can be used, resulting in slightly thinner bars that bake a bit faster.
