Peanut Butter Chocolate Chip Bars
Description
The recipe blends all-purpose flour with baking soda and salt as a base. Separately, melted butter, brown sugar, granulated sugar, vanilla, egg, and creamy peanut butter are combined and then gently folded into the dry mixture. Semi-sweet chocolate chips are incorporated into the dough, with some reserved for topping.
The dough is spread evenly in a lined 9x13-inch pan and sprinkled with additional chocolate chips. Baking at 360°F takes 17 to 20 minutes until a toothpick inserted shows mostly clean. The finished bars have a chewy texture with peanut butter richness and chocolate bursts.
They can be served once cooled, good for on-the-go snacking or dessert. Using an 8x8-inch pan yields thicker bars requiring slightly longer baking. Avoid organic peanut butter as its oiliness affects the texture.
Baking time varies by oven and pan; check bars starting at 15 minutes to achieve desired chewiness.
Ingredients
- 2 cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon salt
- ¾ cup butter melted and cooled, unsalted
- ½ cup brown sugar tightly packed
- ⅓ cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ¾ cup peanut butter see note, creamy
- 1 ½ cups chocolate chips semi-sweet
Instructions
- Preheat your oven to 360 degrees F and prepare a 9-inch x 13-inch baking pan with parchment paper.
- In a large mixing bowl, stir together the flour, baking soda, and salt. Set aside.
- In a medium mixing bowl, stir together the melted butter, brown sugar, sugar, and vanilla until combined. Stir in the egg and the peanut butter.
- Add the peanut butter mixture to the dry ingredients. Gently fold until everything just start to come together.
- Add almost all of the chocolate chips and fold them into the cookie dough. Save the extras for the next step.
- Transfer the cookie dough into the prepared baking dish and press into an even layer. (see note) Sprinkle the reserved chocolate chips over the top of the dough.
- Bake on the middle oven rack for 17-20 minutes. The bars are done when a toothpick inserted in the center comes out mostly clean. (see note)
- Let the bars cool for 5 minutes in the pan. Then use the parchment paper to lift them from the pan and transfer them to a wire rack to cool completely. Cut into 15 bars and serve.
Notes
- Check bars at around 15 minutes to adjust baking time for desired chewiness and your oven’s performance.
- Use a 9x13-inch pan for standard thickness; for thicker bars, use an 8x8-inch pan and bake 3-5 minutes longer.
- Avoid organic peanut butter as it can cause the bars to become too oily.
