Peanut Butter Chocolate Rice Krispie Bars
Description
The recipe starts by combining peanut butter, honey, and salt, then stirring in rice krispie cereal for a crunchy yet chewy base. The mixture is pressed into a lined pan before topping with a melted chocolate and peanut butter glaze. A sprinkle of flaky sea salt brings contrast to the sweetness of honey and chocolate.
Chilled for at least two hours, these bars become firm enough to cut into 16 squares. The peanut butter adds richness and moisture, while the rice krispies maintain crisp texture. The chocolate topping complements the nutty base and adds a creamy finish.
Stored in the refrigerator, the bars should be eaten soon after removal to prevent melting. Their no-bake preparation and simple ingredients make them a handy, sweet snack or dessert.
Variations can include using other nut butters like almond or cashew, and alternative cereals such as Rice Chex for a slightly different texture.
Ingredients
- 1 cup peanut butter 1 tbsp
- 1/4 cup honey

- In a large mixing bowl combine 1 cup peanut butter, 1/4 cup honey, and 1/4 tsp salt
- Once thoroughly combined add the rice crispies to the bowl and mix again
- Mix until the cereal and pb are an even mixture
- Press firmly into the pan
- Heat chocolate chips and 1 tbsp of peanut butter in the microwave or over a double boiler until the chocolate melts and the peanut butter can be easily mixed in
- Pour the chocolate over the rice krispie layer
- Season with flakey sea salt if desired
- Place in the fridge to chill until the bars are solid - at least 2 hours
- Cut the bars into 16 even squares and enjoy!
- Store the bars in the fridge and enjoy shortly after removing from the fridge because the bars will melt quickly
Notes
- Substitute peanut butter with almond or cashew butter as preferred.
- Rice Chex or similar cereals can replace rice krispies for a different texture.
