Description

This recipe creates a chilled, sweet confection by combining butterscotch chips, creamy peanut butter, and butter over gentle heat until smooth. Once removed from heat and flavored with vanilla extract, the mixture is cooled briefly before folding in most of the rainbow mini marshmallows for bursts of chewy sweetness inside.   • 2 cups butterscotch chips
  • 1 cup peanut butter
  • 4 tablespoons butter
  • 1 teaspoon vanilla extract pure
  • 10 ounces mini marshmallows rainbow

Instructions

  1. Line an 8x8 baking pan with parchment paper.
  2. In a medium pot on medium heat, whisk together the butterscotch chips, peanut butter and butter  for 2 minutes until smooth.
  3. Turn off the heat, whisk in the vanilla extract and let cool for 15 minutes.
  4. Fold in 3/4 of the marshmallows and pour into the baking pan, then sprinkle the remaining marshmallows on top and press them into the mixture to adhere them.
  5. Place the baking pan into the refrigerator for at least 2 hours before cutting into 12 pieces and serving.
