Description

This recipe uses pre-made or homemade peanut butter cookie dough portioned into a mini muffin pan. The cookies bake until light golden on the edges and remain soft. Immediately after baking, a mini Reese’s peanut butter cup is pressed gently into the center of each cookie while still warm, allowing it to soften slightly and meld into the cookie.

Once cooled completely in the pan, the cookies loosen easily and can be removed without crumbling. The combination of peanut butter cookie and peanut butter cup candy creates layers of peanut flavor with a slight chocolate note.   • 24 Reese’s peanut butter cups mini

Instructions

  1. Preheat the oven to 350°F. Grease a mini muffin pan.
  2. Fill each well of the muffin pan with a piece of cookie dough (about 1 tablespoon).
  3. Bake the cookies for 12-15 minutes or until lightly browned on the edges. While the cookies are baking, unwrap the peanut butter cups.
  4. Remove the pan from the oven and gently press a peanut butter cup into the center of each cookie. Let cool for 1-2 hours in the pan.
  5. Gently loosen the cookies by spinning them in the pan. A small knife can help remove them if needed.

  • Chocolate chip or homemade cookie dough can be used as a substitute for peanut butter dough.
