Peanut Butter Cookie Magic Bars

These Peanut Butter Cookie Magic Bars start with a baked peanut butter cookie dough base topped with a variety of mix-ins including chopped Oreos, chocolate chunks, peanut butter chips, toffee bits, and Reese's Pieces. Sweetened condensed milk is poured over to bind the layers and create a rich, caramelized topping after baking. The bars are baked in a single pan and cooled before slicing, producing a layered bar with a chewy and crunchy texture mix and a combination of peanut butter, chocolate, and toffee flavors.

Description

Peanut Butter Cookie Magic Bars use ready-to-bake peanut butter cookie dough pressed into a pan and partially baked to form the base. A layer of assorted toppings—Oreos, chocolate chunks, peanut butter chips, and toffee bits—is spread over the warm cookie crust. Pouring sweetened condensed milk over helps to bind the layers and caramelize during the second bake, resulting in a rich, sticky texture. After topping again with remaining Oreos and Reese's Pieces, the bars bake until golden and set. Cooling for at least two hours is essential for proper slicing and firm structure.

The bars showcase peanut butter flavor combined with the crunch of Oreos and toffee providing a contrast to the chewy cookie base. They are suitable for dessert or snack occasions and can be stored at room temperature for several days.

Options include substituting the cookie dough base with a graham cracker or Nutter Butter crust, or replacing Reese's Pieces with nuts or coconut for a different texture. These bars can also be frozen for up to three months if stored airtight.

Ingredients

Servings
  • 16 ounces Peanut Butter Cookie Dough ready to bake
  • 16 Oreo cookies chopped and divided
  • 1 cup chocolate chunks
  • ½ cup peanut butter chips
  • ½ cup Heath Bits o' Brickle Toffee Bits
  • 14 ounces sweetened condensed milk
  • 1 cup Reese's Pieces

Instructions

  1. Preheat the oven to 350°F and line a 9x13-inch baking pan with parchment paper.
  2. Press the peanut butter cookie dough evenly into the bottom of the pan and bake for 15 minutes.
  3. After baking, sprinkle half of the Oreos, all of the chocolate chunks, peanut butter chips, and toffee bits over the top of the cookie layer.
  4. Pour the sweetened condensed milk over the top and cover as evenly as possible, but it doesn't need to fully cover.
  5. Layer with the remaining Oreos and Reese's pieces.
  6. Bake for an additional 25 to 30 minutes. The condensed milk will begin to have a caramel color when it's done.
  7. Remove from the oven allow the bars to cool in the pan for at least 2 hours before removing and slicing.

Notes

  • You can swap the peanut butter cookie base for a graham cracker or Nutter Butter crust by mixing 1 1/2 cups finely crushed crumbs with 1/2 cup melted butter and pressing into the pan without pre-baking.
  • Mix or replace Reese's Pieces with nuts or coconut to vary texture and flavor.
  • Keep bars covered at room temperature for up to 4 days to maintain freshness.
  • To freeze, wrap airtight in a container or bag, which will keep for up to 3 months.
