Peanut Butter Cookies

Peanut Butter Cookies blend creamy peanut butter with a buttery dough to create soft, slightly chewy cookies with a hint of crunch from the sugar coating. The recipe uses a combination of baking soda and baking powder for leavening, resulting in a tender texture. Rolling the dough balls in granulated sugar before baking adds a light sweetness and a slight crust. Best when not overbaked, these cookies set as they cool and can be enjoyed for several days when stored properly.

Description

Peanut Butter Cookies combine room-temperature butter and creamy peanut butter for a smooth base, enhanced by both light brown and granulated sugars for balanced sweetness and texture. The mixture is lightly leavened with baking soda and powder, helping the cookies rise moderately and keep a soft crumb. Before baking, dough balls are rolled in granulated sugar, providing a subtle crunchy coating once baked. The baking time is short, ensuring the edges turn golden while the centers remain tender. Letting the cookies cool on the baking sheet allows them to finish setting without becoming dry.

This recipe results in tender cookies with a slight crispness on the edges and a soft interior, making them ideal for a comforting treat or to share with family and friends. Their peanut butter richness is complemented by the sugar crust, creating a balanced flavor and texture that is enjoyable fresh or over a few days.

Store the cookies airtight at room temperature for up to three days to maintain freshness. Avoid overbaking to keep the centers soft and moist; residual heat will complete the setting process during cooling on the pan.

Ingredients

Servings
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter at room temperature
  • 1/2 cup peanut butter creamy
  • 1/2 cup light brown sugar packed
  • 1/2 cup granulated sugar
  • 1 egg large
  • 1 1/2 teaspoons vanilla extract
  • granulated sugar for rolling cookies in, extra

Instructions

  1. Preheat oven to 350 degrees F. Line a baking sheet with a Silpat baking mat or parchment paper and set aside.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. Using a stand mixer or hand mixer, cream the butter and peanut butter together until combined. Add the sugars and beat until creamy and smooth, about 2 to 3 minutes. Add in the egg and vanilla extract. Mix until combined.
  4. Add the dry ingredients and mix on low until just combined. Don't over mix.
  5. Take about 2 tablespoons of dough and form a cookie dough ball. Roll in granulated sugar. Place cookies on prepared baking sheet, about 2-inches apart.
  6. Bake the cookies for 9-10 minutes or until they are golden at the edges and just set. Don't overbake, the cookies will set up as they cool. Remove pan from oven and let cookies cool on the baking sheet for 4-5 minutes. Transfer to a cooling rack and cool completely.

Notes

  • Take care not to overbake; the cookies will firm up as they cool on the baking sheet.
  • Store leftovers in an airtight container at room temperature for up to three days to preserve freshness.
